JOYCE'S BANANA BREAD RECIPE

My favourite easy Banana Bread recipe

This was my Mother-In- Laws recipe and is just fabulous, moist and delicious and keeps well in the fridge for a week
(If it lasts that long)






Serves 8-12


  • Preparation time 15 minutes.
  • Cooking time 45-50 minutes at 375F or 180C




RECIPE

Ingredients:


  • 120gm Sugar
  • 120gm Butter
  • 2 eggs
  • 250gms Self Raising flour
  • 1/2 small teaspoon of Baking Soda
  • 1 Tablesppon milk
  • 2 very ripe bananas
  • A few drops vanilla
  • Pinch salt

METHOD
Preheat the over to 375F or 180C
  1. Butter a 9 x 5 inch (13 x 23cm) loaf pan well
  2. Cream butter and sugar together and add eggs one at a time, beating well between.
  3. Mash bananas with vanilla
  4. Disolve Baking Soda in the milk and add to bananas
  5. Mix in bananaas
  6. Fold in flour and pinch salt
  7. NB: If wanted you could add 1/2 cup sultanas or walnuts to flour before adding to wet ingredients
Note: Use very ripe bananas, in fact even a bit mushy for the best banana taste!
